It has been a while since I last posted but I am back! Finals week was crazy and then I started my human resources internship for a civil engineering consultant company right after. It took some time to adjust to my new schedule, but now I found time to get back into my hobbies I miss so much.

To start off my comeback, Happy Fourth of July (Independence Day) to my followers in the United States! I celebrated by meeting with my girlfriends and we decided to cook brunch together. One of our friends is allergic to gluten but I love how we can still find yummy foods to make. We made Lemon Ricotta Pancakes and Warm Berry Compote in theme of our red, white, blue flag. The recipes are linked above if you would like to try it out. I really recommend this, especially if you are looking for gluten-free recipes. 🙂

I realized that it has been months since I made a post about food so I hope you enjoy this simple recipe! 🙂

 

Kimchi Grilled Cheese Sandwich

-1/2 cup of kimchi
-2 slices of bread (I think white would be good but I used wheat)
-2 slices of cheddar cheese
-sesame seeds (can use with seaweed)
-butter
-oil

^ Add a dash of oil to the pan along with the kimchi. Make sure to cut the kimchi into smaller pieces. Cook on medium heat for about 3-5 minutes or until the kimchi seems clear. Once the kimchi is cooked, set it aside on a plate or bowl. Clean pan so it is ready when the sandwich is prepared.

^ Lightly butter both sides of the bread slices.

^ Add the cooked kimchi to one slice of bread and cheddar cheese on the other. Sprinkle some sesame seeds on the kimchi. Now the slices are ready to put together!

^ On medium heat, grill each side for about 1-2 minutes. Keep checking the side that is being grilled.

This is one of the dinner dates I often have with my girlfriends. ^_^

Korean BBQ Short Ribs
-1 lb. of short ribs
-1/4 cup of Korean BBQ marinade
-1-2 tbsp. of sesame oil (optional)
-1 oz. of chopped green onions
*let the short ribs marinade in the fridge for at least 4-5 hours

Went to University of California at Davis (U.C Davis) for a conference over the weekend. While I was there, I got to spend time with my closest friend. ^_^ I brought some treats from home for my friend and made some kusudamas for her roommates because I love giving gifts plus her roommates are crafters as well. 🙂 One of her roommates was sooo nice and gave me a crocheted cactus that she made! I also got to make white chocolate blueberry cheesecake cookies with my girl 😀 The original recipe is white chocolate raspberry cheesecake cookies but you can replace the raspberry with blueberry and it still tastes delicious. It’s great for late night sweets yum yums! ^_^

This is a different version of Ddukbokki with a little bit more ingredients. I actually like this version more because it has some sweetness to it than the previous recipe I used. Link to recipe is here.
